The Southwest Grain Collaborative
& the White Sonora Wheat story

SGC’s mission is to promote and establish an agroecological, whole-farm-system philosophy, which prioritizes biodiversity and soil building (feeding the soil microbiome), all of which is foundational for long-term success. Engaging in regenerative organic farming requires us to constantly renew our commitment to the health of the land. Being intent on practicing good stewardship means keeping the long-term future in mind.

SGC is a nonprofit organization under the umbrella of the Santa Fe Community Foundation.

White Sonora Wheat is a heritage grain with a rich agricultural history in the southwest. Originally cultivated by the Spanish missionaries in the 17th century, this drought-tolerant grain was a staple that produced the first flour tortillas. White Sonora Wheat is highly nutritious and low-gluten with a rich nutty flavor and unique texture.

We need to write something in here about its density and favorable baking techniques to ensure the best consistency in baked goods...Softer wheats don’t generally absorb as much water as a harder one...
Also, a bit about our own baking experiments with this flour...

Los Poblanos is proud to be working with the Southwest Grain Collaborative to support a renewed grain infrastructure for New Mexico and revive traditional heirloom grains through regenerative organic farming. The early yields have provided teaching opportunities around farming in the Rio Grande Valley and renewed interest in this significant heirloom crop.
