Culinary & Cocktail Programs

Our Rio Grande Valley Cuisine is rooted in seasonal organic ingredients from our own farm harvest as well as provisions sourced from longstanding relationships with local farmers and herdsmen. Informed by the daily harvest, Los Poblanos cuisine is constantly evolving with the seasons and celebrates the foods indigenous to New Mexico's Rio Grande Valley.

Sourcing from the surrounding fields and other local farms, our cocktail program features a wide variety of fresh organic ingredients and small-batch barrel-aged spirits including our own botanical gin as well as house-made components including lavender simple syrup, bitters and amari.

Named a top ten US hotel for food and drink by Global Tastemakers.
