Located on an organic farm in the Rio Grande River Valley, our restaurant, CAMPO, is a casual fine-dining experience featuring the most purely crafted field-to-fork menu in the Southwest.

Our Rio Grande Valley Cuisine is rooted in seasonal organic ingredients from our own farm harvest as well as provisions sourced from longstanding relationships with local farmers and herdsmen. Informed by the daily harvest, Los Poblanos cuisine is constantly evolving with the seasons and celebrates the foods indigenous to New Mexico's Rio Grande River Valley.

Visit the Farm Shop, located in the renovated historic dairy barns, and explore the Farm Foods market at the shop entrance. Farm Foods offers pastries, espresso drinks, a light selection of lunch options and fresh artisan bread baked on site each morning in our steam-injected European bread oven.

Bar Campo

Sourcing from the surrounding fields and other local farms, cocktails at Bar Campo feature a wide variety of fresh organic ingredients and small-batch barrel-aged spirits as well as house-made components including lavender simple syrup, bitters and amari. The cocktail program is a stellar example of the culinary model at Los Poblanos, bringing together teams across the property - the gardeners, the chefs, the mixologists

Bar Campo serves creative food offerings on Monday and Tuesday evenings when only the bar is open. While our standard bar menu is available, we invite you to taste our chef-selected options exclusively available at the beginning of the week. These nights give our chefs time to show off their creativity and experiment with new ideas - and give you a one-of-a-kind dining experience.

Campo proudly offers a personalized eight-course dining experience at the Chef's Table featuring seasonal ingredients true to Campo's Rio Grande Valley Cuisine. Immerse yourself in the spirit and artistry of the open kitchen from a communal, counter-style table. 

Our culinary and beverage team will work in tandem to guide you through the entire experience. Beverage pairings are optional, and may include wine, spirits, cocktails and beer.  Campo also has an extensive wine & spirits list that you may select from a la carte.

Los Poblanos Dining Series

Los Poblanos is proud to present a dining series like no other. Executive Chef Jonathan Perno, resident Sommelier Dylan Storment and the award-winning culinary team at Los Poblanos have carefully curated an entire year of Rio Grande Valley dinner programming to highlight the spirit and artistry of the season.

This series pays homage to our local ranchers, farmers, vintners, brewers and distillers who share in our culinary philosophy and understand that flavors and ingredients are as important as the environment and terroir they originate from.
