Immersive Farm Experience
Taste your way around our organic farm and learn about how we grow the highest quality food through sustainable farming methods. The autumn harvest is a special time on the farm, with different crops coming out of the ground every day. From heirloom tomatoes to culinary herbs to native plants, you will have the opportunity to harvest and taste the unique ingredients that go straight from our farm to the kitchen.
Natural plant dyeing is a meditative and creative process of extracting beautiful colors straight from plants. Using the abundance of natural color around us this season, you will create a one-of-a-kind silk scarf dyed with botanicals from our farm. As an antidote to a fast-paced life, this technique encourages us to relinquish control and let nature do its thing. This two-part session includes imprinting flowers onto natural fabric by rolling, bundling and steaming with surprising and delightful results.
Exploring Southwest Wines
As the oldest wine-producing region in the United States, New Mexico has a rich, complex history of viticulture to explore. Join our Director of Wine & Spirits, and Certified Sommelier, Dylan Storment for a deep dive into the world of New Mexican and Southwestern wine. This experience will bring Bar Campo’s award-winning wine menu to life and introduce guests to local winemakers with unparalleled passion and expertise in producing fine high-desert wines.
Corn, Nixtamal and Masa Culinary Demo
Our outstanding culinary team, Led by Head Chef Christopher Bethoney, will guide a demonstration on how Campo uses corn as an essential ingredient in our signature Rio Grande Valley Cuisine. Drawing from Spanish, Mexican and Native American cultures, the Campo team uses heritage corn and nixtamalization to prepare with delicious results. Learn about nixtamal and masa, and taste the tamales, tortillas and hominy featured on our award-winning menus.
Seasonal Treatment at the Hacienda Spa
Relax into a restorative 50-minute seasonal facial or massage. Informed by the elements of nature, the unique treatments and elegant space provide the ultimate rejuvenating immersive experience. Our spa treatments are inextricably connected with the farm. Every treatment journey begins with the Hacienda Spa's signature opening ritual, which infuses seasonal botanicals harvested from our property.
This six-course long-table dinner brings guests together to experience the bounty of the fields with freshly harvested ingredients from the Los Poblanos farm and partner producers. Chef Christopher Bethoney's culinary team will weave together a menu that honors the ingredients and commemorates the season. Complete with sommelier-selected wine pairings, the Harvest Celebration Dinner at La Quinta promises to be a culinary experience unlike any other.
