This experience, led by Dylan Storment, our Director of Wine & Sprits, features guest sommeliers and winemakers leading sessions on the craft of viticulture and art of wine tasting. From local New Mexican wines – made in some of North America’s oldest wine-producing regions – to fine wines from around the globe, awaken your palate and inspire a deeper interest in the world of wine. Interactive retreat sessions will include guided tastings, pairing seminars and lively discussions about the history and future of winemaking.

Dinner and Conversation at Campo

Following the welcome reception, enjoy an informal dinner with NM winemakers, our Head Chef, Chris Bethoney, and our Director of Wine & Spirits, Dylan Storment. This communal, family style meal will be paired with NM wines. Immerse yourself in New Mexico's rich wine history and culture.

Wine Writing Seminar with Ray Isle

Ray Isle, Executive Wine Editor of Food & Wine magazine and author of The World in a Wineglass, will lead an interactive session on the process of wine writing and reviewing. Retreat guests will receive a copy of Ray’s book to take home. A short meeting and signing session will follow after the seminar.

Food and wine pairing seminar

Join our Los Poblanos sommelier team for an informative session discussing the intricacies of pairing food and wine. Culinary pairing samples will be curated by our Head Chef, Christopher Bethoney. Take what you learn in this session to your own kitchen and craft dream pairings to enjoy at home or delight your dinner guests.

Sauternes in the Sala

Gather in the historic Sala Grande for an evening tasting of various producers and vintages of Sauternes. Hosted by our sommelier team, guests are encouraged to engage in discussion of the intricacies of this incredible wine.

Organic, Biodynamic and Natural Wine

What makes a biodynamic wine? What is natural wine? Join our team in an engaging and informative session on this curious topic. Learn about key processes, styles, regions and producers. Our sommelier team will guide you through a curated tasting and discussion.

Blind Tasting with Tim Gaiser, MS

Join Tim Gaiser, Master Sommelier and author of Message in a Bottle: A Guide to Tasting Wine for an interactive session about the process of deductive/blind tasting practiced by sommeliers around the world. Retreat guests will receive a copy of Tim’s book to take home. A short meeting and signing session will follow the seminar.

Champagne & Caviar

Mingle with retreat guests in the La Quinta Library with the best grower Champagnes and caviar bites.

Dinner in the Grande Ballroom

Be seated in the grand ballroom for an elegant long table dinner celebrating the final night of our wine retreat. This four-course dinner will be paired with exquisite wines from around the globe.
