We believe every glass of wine should tell a story. Our Campo Cuvée, exclusively available at Campo by the glass, embodies that ethos—a beautiful partnership between Martin Woods Winery and Los Poblanos that celebrates terroir, craftsmanship and sustainability.
Our relationship with Martin Woods Winery began with a shared respect for the land and sustainable practices. Winemaker Evan Martin, has long been a source of inspiration to our culinary team. His small-batch wines from the oak-forested foothills of the McMinnville AVA in Oregon’s Willamette Valley are crafted with the same reverence for nature that defines Los Poblanos.
Last winter, in anticipation of a long-table dinner and wine seminar featuring Martin Woods wines, our chefs and sommeliers traveled to Oregon. They explored the vineyards and cellars, exchanging ideas for a menu that would seamlessly blend Rio Grande Valley cuisine with Oregon’s distinctive flavors. The journey brought them closer to the land—walking through misty forests, sampling cool-season produce and witnessing the sustainable practices behind Martin Woods’ wines.
As an extension of that collaboration, our team was invited back to Martin Woods to taste a selection of wines from Evan Martin’s barrel room and create Chardonnay and Pinot Noir Cuvées. The results represent a blend of elements including grapes from select vineyards, Evan Martin’s wine-making mastery and the palettes of our culinary team.
The Campo Cuvée Chardonnay is an artful blend of grapes from three distinct vineyards: Koosah, Pearlstad, and Yamill Valley. Each site, nestled within Oregon’s cool-climate Willamette Valley, brings unique characteristics to the blend. The vineyards benefit from the cool marine air channeled through the Van Duzer Corridor, ensuring a fresh, vibrant profile. Koosah Vineyard contributes notes of lemon, green apple, white flowers, and salinity, with a lush expression balanced by lively acidity, Pearlstad Vineyard adds complexity with lime, candied lemon, roasting herbs, and pear, Yamill Valley Vineyard enhances the blend with savory nuances of apples, peaches, lemongrass, and wildflowers. The result is a wine of stunning balance—bright and energetic, yet layered and complex.
When pairing the Campo Cuvée Chardonnay its versatility shines across our menu. At dinner, it pairs beautifully with Ash-Roasted Vegetables and Local Pork Confit or complements lighter fare like the Lemon Za’atar Salad and Pescado en Mole. For brunch enthusiasts, its crisp acidity harmonizes with our Eggs Benedict, Grilled Sourdough Toast or Grilled Chicken Salad.
The Campo Cuvée Pinot Noir is currently on our reserve by-the-glass list. After many hours of trying different blending ratios to achieve the perfect cuvée, our team decided on a blend of the Bednarik, Hyland and Jessie James vineyards. Dominated by Bednarik and Hyland – Bednarik is a vineyard planted with own-rooted vines planted in the late 1980’s and offers notes of ripe strawberries and cranberries, sweet cherries and a noted spice that builds on the palate on the finish. Hyland is a vineyard that brings incredible fragrances of blueberries, hibiscus, rose petal, raspberries – and cinnamon and clove on the finish. The blend was completed with the addition of Jessie James vineyard, a powerful wine with notes of blackberries, black cherries, violets, black tea and notes of mint and pepper on the finish. On our current menus this wine is perfect with our Ash Roasted Vegetables, Pumpkin Risotto, Barbeque Brisket Sandwich, or Grilled Chicken Salad.
