Spring arrived on the farm with a snowstorm that made the gardens and lavender fields sparkle with sun breaking through the low-hanging clouds. The back-and-forth play of warm sunny days and reminders that winter can return at a moment’s notice keep the farmers on their toes as they prepare to bring the farm out of winter slumber.

The recent addition of a full spirits license has allowed us to develop an exciting new bar program that pays homage to Los Poblanos agricultural roots and organic farming model. Sourcing from the surrounding fields and other local farms, cocktails at Campo feature a wide variety of fresh organic ingredients and small-batch barrel-aged spirits as well as house-made components including lavender simple syrup, bitters and amaros.

Perfect for warm days, we're enjoying the Campo Margarita, which incorporates our own lavender simple syrup, and the Lavender'99, garnished with lavender from our fields and is a salute to 1999, the year we first planted lavender.

Visit Bar Campo daily from 4:00 pm until 9:00 pm.

Spice up dishes, desserts and cocktails with this smokey finishing salt

After experimenting with chiles from all over the Southwest and Mexico, our culinary team created this warm and smokey finishing salt with chilaca chile peppers smoked in Oaxaca, Mexico. We love it so much that it's available two ways! Find it in our classic glass jar, or in a vial as part of the Southwest Salt Set - a great way to try four of our signature salts.

We heard you loud and clear!

We know our restaurant, Campo, can be a “lively” experience where noise levels sometimes made it difficult to have a dinner conversation. With your feedback, we made a significant investment in reducing the decibel levels at Campo. We contracted VAST Technologies, a local sound engineering company, that recorded decibel levels of the space, identified the biggest sources of increased sound levels, and proposed a variety of solutions for us to consider.

Los Poblanos Holiday Shop at Sabah San Francisco

While most holiday shopping will be done online this year, there are still safe ways to shop this season. Our friends at Sabah in San Francisco are hosting a Los Poblanos holiday pop-up through the end of the year, which promises to be safely distanced, with doors flung open for ample fresh air, and full of holiday cheer. With Sabah's beautiful handcrafted shoes and our artisan lavender and Farm Foods collections, it's a wonderful opportunity to peruse lovely gifts that were made by hand. Birdwatching at Los Poblanos

Unplug your devices and connect with nature by taking in all of the amazing wildlife in the Rio Grande River Valley. In a recent article, Albuquerque Journal informs that "across the contiguous areas of the country, some 800 species of birds have been identified and more than 500 of those can be spotted in New Mexico." Last December, Inn guests spotted 23 unique bird species and 235 individual birds on our 25 acres in just an hour! Come see for yourself, Inn amenities include binoculars and cruiser bicycles on loan, perfect for exploring and observing the beauty of the Rio Grande River Valley.

Farm Journal: Farm Animals of Los Poblanos

Our mission is to preserve the historic Los Poblanos Ranch by cultivating a dynamic business dedicated to sustainable agriculture, hospitality, historic preservation and community. As such, we perpetuate the agricultural history by maintaining an active organic farm. And what would a working farm be without animals? The presence of animals on our farm adds a lovely element of surprise and delight to anyone who comes across them, and they are a nod to the long agricultural history of the property. From the original Indigenous farmers who likely had animals to help support their needs long ago, to the Simms family's model experimental farm of the 1930s and 1940s, there's no doubt animals have been an integral part of Los Poblanos agricultural history.

Thank you to all who have joined us at the table this year, taken respite at the inn and spa, and visited our farm. We wouldn't be here without you. We are grateful for our incredible team's hard work and warm hospitality. And we give thanks to the generations of people who have farmed and preserved this special place in the Rio Grande Valley. Wishing you and yours a wonderful Thanksgiving and holiday season.
