January in New Mexico can be chilly, so make sure to come prepared. Dinner on Friday and breakfast and lunch on Saturday are included in the retreat programming. Beekeeping on the farm
A rich agricultural history
Our farm has been a site of rich agricultural activity since the very beginning. In the 1930s and 1940s, Los Poblanos was a model experimental farm that grew sugar beets, alfalfa, oats, corn and barley. The farm boasted one of the finest purebred herds of Guernsey and Holstein cows, and purebred rams were raised with the intention of helping sheep herders in the state improve their flocks. The historic greenhouse was used as a laboratory for growing new varieties of roses and chrysanthemums commercially.
A sweet partnership between people and pollinators
We are thrilled to introduce our new honey collection, made possible through our partnership with Bear Canyon Honey. Bear Canyon embodies the interconnection of the hive by uniting beekeepers from Taos to Las Cruces and in the Middle Rio Grande Valley. Their work has helped build a strong network of local honey suppliers, support healthy ecosystems and celebrate a growing community of backyard beekeepers.

Experience Ranchlands at Los Poblanos
We are excited to announce our collaboration with Ranchlands, an agricultural business focused on the conservation of ranch lands in Southern Colorado that incorporates hospitality, craftsmanship, consulting and ecotourism initiatives. Our two properties share many of the same values around regenerative farming and supporting the local food economy. The team from Zapata Ranch will be visiting Los Poblanos for a conversation on Sustainable Ranching and Land Conservation on August 10th as part of our Dr. Armin Rembe Lecture Series, and a Dinner with Guest Chef Ivan Guillen on August 12th.

Recent press in Architectural Digest
We're so excited to share this Architectural Digest article that describes our recent expansion and renovation in partnership with our friends at Atkin Olshin Schade Architects. This project added 28 guest rooms and restored historic dairy barns that house our new restaurant, Campo, expanded the Farm Shop and provided more space for lavender production. Executive Director Matt Rembe says the renovation was all about "being respectful of the past while introducing new ideas and innovation.”
Partner AOS Architects is currently exhibiting their innovative architectural preservation work at the 2018 Venice Biennale Exhibit as part of the exhibition TIME SPACE EXISTENCE until November 25, 2018. We congratulate AOS and are thrilled to have collaborated with them.

While she's no new face to the farm, we are thrilled to announce Mona Purvis as our lovely Campo General Manager. After spending many seasons as Banquet Manager for our private events business, Mona's role grew this summer to oversee all front of house dining operations at Los Poblanos. If you've dined at Los Poblanos in the past few months, it's very likely you've spotted her buzzing around Campo and La Quinta and making sure everything is running smoothly.

The story of Penny and her best selling Lavender Salve
Women's History Month is an exciting time for Los Poblanos as our property has been deeply impacted and shaped by amazing women. One of the most influential women throughout the property's history is our current owner and Los Poblanos matriarch, Penny Rembe. Penny and her late husband Armin have lived on the property since the 1970s, and Penny's creativity and business savvy have influenced the preservation and growth of Los Poblanos in countless ways. From opening the original bed and breakfast in 1999 to developing the recipe for our signature Lavender Salve, Los Poblanos simply would not be the place it is today without Penny's leadership and inspired vision.
Chef Chris Bethoney recognized as James Beard Awards semifinalist
We are incredibly proud of our Head Chef Chris Bethoney for his recognition as a James Beard Foundation semifinalist for the 2024 Best Chef in the Southwest award.
Chris has played an integral role in shaping Campo’s Rio Grande Valley Cuisine alongside a dynamic team of chefs, farmers and gardeners. He is a skilled collaborator, working with our butchery, bakery and craft distillery, artisan product development team, farmers and gardeners, and building relationships with growers and herders across New Mexico – all while leading and mentoring his team on a daily basis to deliver an incredible dining experience.
Chris was the opening Sous Chef of Los Poblanos’ onside restaurant, Campo, in 2017 and has been the Head Chef since 2022. He and his team do things the hard way, the slow way – from cutting handmade pasta with guitar strings to mentoring anyone who wants to grind and nixtamalize corn – sous chefs, line cooks and dishwashers – to committing to an entire harvest of blackberries from a small local farm.
The James Beard Restaurant and Chef Awards recognize talent and achievement in the culinary arts, hospitality, media, and broader food system, as well as a demonstrated commitment to racial and gender equity, community, sustainability, and a culture where all can thrive.

Celebrating the Legacy of John Gaw Meem
Each November we pause and reflect on the life and legacy of one of the most influential figures in the storied history of Los Poblanos: John Gaw Meem, the renowned architect behind Los Poblanos Ranch and the La Quinta Cultural Center. Meem, born on November 17, 1894, is widely considered New Mexico's greatest architect of the 20th century. Throughout his long, successful career, Meem worked on countless projects and collaborated with many leading figures in the Southwest including Ruth and Albert Simms, the owners of Los Poblanos in the 1930s.

Spotlight: Penny Rembe
As a company as well as a community we firmly believe that the most important element at Los Poblanos – the thing that makes this business what it is – are the people who work to maintain the history and essence of this historic property. And at the core of that, the heart and soul of this place, is Penny Rembe. Penny is the co-founder and matriarch of Los Poblanos as we know it today. Without her drive, determination, generosity, and expertise in business none of us would be here, able to do what we love every day. In relation to Los Poblanos, Penny’s story is probably one of the most important, so it seems only appropriate that she be the focus of our first spotlight piece.

Wine Spectator recognizes Campo
We are delighted to share that Campo has been awarded the 2024, 2023, 2022 and 2021 Wine Spectator "Best of Award of Excellence." Making its debut in 1981, the Wine Spectator Restaurant Awards Program has been championing excellence in restaurant wine lists for decades. The "Best of Award of Excellence" recognizes wine lists that display a significant vertical depth of top producers or substantial breadth across multiple wine-growing regions. Typically offering 350 or more selections, Best of Award restaurants are destinations for serious wine lovers, and show a deep commitment to wine, both in the cellar and through their service team. Campo is one of only three restaurants in our state to be awarded this honor, and the only winner in Albuquerque.

Soon, cool, crisp mornings will arrive to mark the change in season after a warm desert summer. Autumn in New Mexico is fast approaching, with roadside stands infusing the air with the warming, unmistakable scent of roasting green chile, as hot air balloons float gently across the horizon. The magnificent fall foliage of our native cottonwood and aspen trees provide the perfect backdrop for exploring the trails of the Sandia Mountains, cycling the nearby Paseo del Bosque Trail or simply enjoying the views from the comfort of your patio.
Welcome Spring on the Farm
There's nothing quite like the way spring awakens our little corner of the North Valley. As the days lengthen ever so slightly and temperatures slowly begin to warm, our dedicated farmers germinate vegetables, herbs and flowers in the greenhouse, grown from seeds saved from previous seasons. Lavender cuttings from our fields were taken to the greenhouse during the winter months, have since sprouted roots, and are now transplanted into larger pots to encourage more growth. Daffodils and crocus will soon peek their heads above ground, and our flowering trees will burst into color seemingly overnight. Migrating Canada geese have already made the farm their winter home, and will likely welcome a gaggle of goslings who sweetly parade across the property and learn how to swim in our lotus pond.

A Century of Healthfulness
John Gaw Meem's Journey to the Southwest
It was the spring of 1920 when 25-year old John Gaw Meem IV headed west from New York City. His destination: the Sunmount Sanatorium in Santa Fe, New Mexico. Like many others in the early 20th century, Meem had contracted tuberculosis and been advised by his doctors to recover at a sanatorium in the arid southwest. In a moment of serendipity shortly thereafter, Meem noticed a poster for the Santa Fe Railway and decided on the spot to move to New Mexico for his recovery.

We have always taken the concept of well-being seriously at Los Poblanos. Well-being in tourism can sometimes mean some form of personal actualization, but it's also about being healthy, happy and comfortable. For us, it's also about doing the right thing, whether that's farming sustainably or celebrating our rich culture, and we hope that translates to guests feeling good, both physically and mentally. With the long tree-lined entry beginning to bloom, we've begun crafting our reopening strategy. And with that, we're considering what well-being means today, and what it will mean over the next year.
Los Poblanos Love Stories: Isabel & Simon
For Isabel and Simon, it all started with pizza. Now, pizza almost always leads to wonderful things, but for this lovely couple it was the catalyst for an amazing life full of love, partnership, good eating, and endless adventures. The story goes that Isabel found Simon on OkCupid and after much perusal of his profile, she sent a message off into the void, hopeful and intrigued. He didn’t reply. She could only assume that he wasn’t interested, as anyone might in such circumstances, but something – she’s still not quite sure what – made her send another message a few days later. This time, he answered quickly and so they began trading messages in earnest. She was abroad in Brazil at the time, so they were able to get to know each other through stories and photos before meeting in person. She says that early into their correspondence, she sent Simon a photo of her favorite pizza in Sao Paulo and that, as they say, “sealed the deal.” He knew instantly that he had found a woman who loved to think about food as much as he did, a trait that he sees as somewhat of rare treasure. And so the scene was set for their epic love story.
Blackberry Buckle
All across the farm, we have little blackberry brambles tucked here and there between the heirloom roses, fruit trees, figs, and wisteria vines. For most of the year they go relatively unnoticed compared to their flashier, more prominent counterparts, but come July and August when the berries start shifting from vibrant crimson to lovely deep, dark blue-violet, the blackberries become the star of the show. Often, in the early mornings, our pastry team can be found in the gardens harvesting the ripest berries for use in the kitchens. They stand out, attired in their crisp chef whites.
Announcing Tea Season at La Quinta
As the historic Los Poblanos gardens burst into bloom, we are thrilled to announce tea season at La Quinta this May. The season will begin with Mother's Day Tea, followed by Afternoon Tea served each Wednesday and Sunday afternoon from May 12 through October 10. As our previous guests can attest, there's something transportive about spending an afternoon at La Quinta, and we can't wait to welcome you back for tea.
The Legacy of Women in the Fields and Gardens of Los Poblano
Los Poblanos has a long and varied history of visionary women that created the foundation and the future of our cherished farm, fields and gardens. Beginning in the 1930s, Ruth Simms was instrumental in laying the groundwork to build an experimental farm that pushed the boundaries of farming and gardening in the New Mexico desert. By bringing Rose Greely to Los Poblanos to design the formal rose garden and surrounding areas, Simms firmly established that women were vital to the vision of the farm's future. One of the first female landscape architects in the country, Rose Greely made a permanent statement with her design contribution to our historical gardens.

Welcome spring with a new menu at Campo
Led by James Beard Award semi-finalist, Executive Chef Jonathan Perno, Campo's Rio Grande Valley Cuisine is rooted in organic ingredients that are celebrated with each seasonal menu change. With cuisine that marries our own farm's harvest with ingredients sourced from local farmers and herdsman, each dish exemplifies a dedication to quality which is experienced in every bite.
The Lotus & The Rose Workshop
Lotus flowers and roses are two of our favorite botanicals growing here at Los Poblanos and are the inspiration behind our upcoming The Lotus & The Rose workshop on Saturday, August 5th. Join us for a full day of relaxation and learning surrounded by our beautiful gardens. Begin the morning with a sound healing meditation, led by Aimee Conlee, where you will practice breathing, light stretching, and relaxation techniques involving sound. Once you’re fully relaxed, take a leisurely stroll around the pond and though the rose gardens, where Christa Obuchowski will talk about the different types of roses and how their essential oils are utilized in aromatherapy and herbal medicine. The in-depth discussion will continue with a demonstration of the distillation process that Christa uses to extract the precious oils from the plants.

We are absolutely thrilled to welcome Kim Vollers and her wonderful family to New Mexico and into the Los Poblanos community. If you've been on the property since May 1st, you've likely seen her as she is constantly on the move and loves meeting guests. As our new Director of Hospitality Operations, Kim oversees lodging, guest services, dining operations, events, programming, grounds maintenance and facilities on our small-but-mighty 25 acre farm. It's a huge job and with over 25 years of hospitality experience, the majority of which was spent at the Woodstock Inn & Resort in Vermont, she is an ideal fit for Los Poblanos.

Farm Journal: Report from the lavender fields
The annual lavender harvest occurs during a brief window in July, dipping into late June and early August, depending on the year. It’s an all-hands-on-deck situation, with groups from all departments coming together to pitch in, enjoy each other’s company and soak up the lavender-scented early morning and evening hours overlooking the Sandia mountains. Our kitchen team has been holding their daily meetings in the fields while harvesting the culinary lavender. Groups from Makers & Merchants, Spa, Community & Cultural Events and more have been a huge help in expediting this year’s harvest.

With a mission dedicated to sustainability and historic preservation, we say Los Poblanos is "rooted in history, planting seeds for the future." Finding a way to create refill options for our product line has always been important to us, and we are thrilled to launch our refill program with our essential sanitizer collection. To minimize single-use plastic waste, keep our refill options on hand and keep clean no matter where the day takes you.
Field Notes from the Farmers
The fields at Los Poblanos are always in flux, changing and evolving with the seasons. Although we can plan as much as we want, ultimately the plants, the rain, and the sun will do just as they please. It is the job of our farmers to work with the whims of nature, adapting the plan as they go, in order to keep the farm alive, well, and productive. Each new season we like to check in with the farm team and see how they’re doing.
The Legacy of John Gaw Meem
Many unique elements come together to make Los Poblanos into the captivating property that it is. The people, the agriculture, the land, and the history all shape the story-book setting of Los Poblanos; but perhaps the most distinctive feature is the architecture. Most notably the Historic Inn and La Quinta buildings designed by the legendary Southwestern architect John Gaw Meem.
Meem revolutionized architecture in the southwest by mixing progressive elements with well-known regional architectural styles. His understanding of natural elements along with stylistic inspiration built an internationally recognized aesthetic and functionality. The full courtyard ranch house, Los Poblanos Inn, and the entertainment building, La Quinta, are now home to our historic inn rooms and event center respectively. The elements in these spaces were designed by Meem to create both an elegant and nostalgic experience.
Recognizing Creative Women of Los Poblanos
Over the past 100 years, a series of remarkable women have left a lasting mark on our historic property. From the bakery to the finance office to the fields, women continue to play an integral part of the story of Los Poblanos. We're pleased to introduce three women who's creativity drives our distillation and cocktail program.
An evening of chamber music, rooted in history
On Wednesday, June 14th Los Poblanos will host a performance in the La Quinta Ballroom in collaboration with Chamber Music Albuquerque as part of the 2023 Dr. Armin Rembe Lecture Series. Chamber Music Albuquerque was founded in 1942 as the June Music Festival by Ruth and Albert Simms, and re-named in 1997 by the Board of Directors to better describe the scope of the organization’s programs. The series was the first of its kind in New Mexico and attracted guests from around the state as well as visitors from far as New York and Detroit and was broadcasted live on radio station KOB. We are excited to revive this connection between CMA and the La Quinta Cultural Center.

Meet Liz Gallery, Culinary Director
Liz Gallery was born and raised in Baltimore, MD. She started her career in the front of the house, and after realizing her passion for restaurants and cooking, she took to the kitchen. Chef Gallery pursued classical training in the culinary arts through apprenticeships with admired chefs including Chef Champe Speidel, Gracie’s, in Providence Rhode Island and Chef Pauly Santee, Rococo, in Hagerstown, Maryland.

Dear friends, family, guests, and neighbors,
Over the course of countless generations as a family farm, we have come to learn that times of transition naturally lend themselves to quiet introspection. This season, as we prepare our fields for winter amidst the falling leaves, we find an even greater need to reflect and come together as a strong, united community.
Now is the time to remember our past – failures and triumphs alike – and to take to heart the lessons history has taught us. They are the deep roots that ground us and give the strength to weather any storm. The key to our resilience lies in an unfailing commitment to our core values of authenticity, preservation, and integrity.
As a family and a business, there is nothing more important than leaving a meaningful legacy for future generations so that they may continue to use and enjoy the land. Here on the farm, we have a saying: “rooted in history, planting seeds for the future.” To us, these words embody not only the spirit of Los Poblanos but also of our community as a whole. We believe in being devoted stewards of the land, practicing sustainable farming, and positively impacting the lives of those around us.

Savour de Legumbres
Using fresh, Rio Grande River Valley harvested ingredients, this vegetable-forward menu invites you to experience a dinner creatively explores flavors in a refreshing new way. Included are offerings such as the fresh Cavatelli with Mushroom. This beautiful noodle is crafted in-house and is the foundation for this complex and richly comforting take on a classic dish. In the third course, roasted leeks and deconstructed and reassimilated with carrots and chimichurri into a stunning and tastey presentation. The beet, from root to leaf, is celebrated in the fifth course and is a striking dish that will intrigue the palate and satisfy the soul.
Los Poblanos Herbal Bug Repellent
We are beyond thrilled to introduce the newest addition to our line of hand-crafted, small batch Los Poblanos products. Meet our new Herbal Bug Repellent! Formulated with a base of lavender hydrosol, distilled from our own plants, and a blend of essential oils that are known to repel bugs. Our farmers and gardeners have been using lavender oil to deter pesky biting bugs in the fields for years, so when it came time to craft our own bug repellent it seemed only natural to use their tried and true method. And wouldn’t you know, it really works! Before releasing it to the world, the LP farmers field tested (quite literally) the formula and came back at the end of the day, unbitten and smelling great.

Yoga retreats at Los Poblanos include classes with multiple instructors, each bringing their unique style and experience to share with the group and deepen your practice. Relax among historic gardens
Our formal Spanish-style gardens were designed in 1932 by Rose Greely, a pioneer female landscape architect. The Greely Garden at Los Poblanos is her only known work in the Southwest and features vibrant flower beds irrigated with river water, Spanish tile fountains, rose cutting gardens and winding pathways.

With longer days and our fields turning purple with lavender, it's time to prepare your skin for summer. As our daily routines shift with the changing weather, our skincare routines should do the same. Seasonal treatments at the Hacienda Spa change every few months and are thoughtfully crafted with our climate and seasonal habits in mind.
