Farm Journal: Fruit Trees Boom and Bust Throughout the Seasons
Fruit trees are integrated throughout the landscape at Los Poblanos. We grow a wide variety, each with a distinct season and individual flavor. The farm team meets regularly with the culinary team, and much of what we plant reflects direct requests from chefs, bakers and others who help us to develop a farm that supports the diversity of Los Poblanos. From the mulberry syrup in your cocktail, to a plum tart in the restaurant and the blossoms and branches that adorn our public spaces, fruit trees enliven every season on the farm. Some are hardy and reliable, while others have challenges that can lead to bounty or failure.

Farm Journal: Late Summer on the Farm
Late summer on the farm is a time of increasing harvest and lots of weeding. The rains we have gotten have helped with the scarce water supply, though we have been modifying our irrigation and planting practices over the last few years as we become more concerned with the flow of the river, the ditches and the spotty monsoon season.
Changes and temporary closures at Los Poblanos
As concerns continue to escalate in our current environment, we've made what we feel is the most responsible, proactive decision given the information we currently have. Effective immediately, Los Poblanos will be closing the Inn, Events and Campo (both dining room and bar), with plans to reopen on May 1. If you have an upcoming reservation with us during this time, you've likely heard from us. But if not, rest assured you will soon. For the safety of our employees, guests and community, we are compelled to do our due diligence in creating space and distance so that people remain well. Community means everything to us.
A Los Poblanos hero: Aldo Leopold
We feel very fortunate to be in New Mexico right now, with vast open spaces, fresh air and big blue skies, and are thankful for the time to walk in the Bosque or in the city's acres of Open Space. One of our heroes at Los Poblanos is the great conservationist Aldo Leopold, whose many years in New Mexico left an impressive environmental legacy on our state. His work in Albuquerque lead to the creation of the Rio Grande Valley State Park, Zoo, Botanic Gardens and Rio Grande Nature Center. In fact, the Nature Center is just down the street from our farm, and is a gateway to the Aldo Leopold Forest and Trail.

Dairy Barn Restoration
Ever since Penny and Armin opened up their home as a 6-room bed and breakfast over 15 years ago, Los Poblanos has experienced steady, measured growth. Much like the stone fruit trees in our orchard, Los Poblanos, as a business, has spent its early life setting deep roots in the community and growing its proverbial branches – Historic Inn, Events, Organic Farm, Lavender Products, and Farm Shop. Those years of hard work, perseverance, and nurturing have laid a strong foundation for what will surely be our most fruitful stage of growth yet. We are currently in the process of renovating the historic dairy barns (once home to the dairy co-op that would become Creamland Dairies) into a brand new space which will include a field-to-fork restaurant, artisan bar, small-batch bakery, as well as a new home for the Farm Shop. The north pasture, which has been largely unused until now, will soon be home to 28 new guest rooms overlooking five acres of newly planted fields and gardens. Once finished, these rooms will boast sweeping views of the Rio Grande River Valley and the majestic Sandia Mountains. Their style is in the vocabulary of the historic dairy buildings.
A look back on an amazing year
2019 at Los Poblanos
As the property slows down after the holiday season, we’re taking time to look back on 2019. The year was filled with many exciting changes at Los Poblanos, from the addition of chickens and sheep to the farm to improving benefits for our growing number of employees. With a complex business, we are constantly challenging ourselves to innovate and be good stewards of the land. While we certainly faced hurdles and setbacks, we are thrilled to share some of our accomplishments from the year as we rolled up our sleeves to further our mission of sustainable agriculture, hospitality, historic preservation and community.
Los Poblanos: Harvard Business School Project Partner | Los Poblanos
Los Poblanos recently had the opportunity to host a team of students from Harvard Business School for one week as part of a required course called the FIELD Immersion. Los Poblanos was one of 171 FIELD Immersion Project Partners spanning 15 cities across 15 states. Together these Partners combined to host more than 1,000 Harvard Business School students in all.
An update from the farm
Hitting pause for a few weeks
Effective Sunday, April 12, we have decided to temporarily suspend Campo Curbside and the bricks and mortar operations in the Farm Shop's Farm Foods market. We have been so thrilled to have your support as we've experimented with these new business models, and it has been heartwarming to see our community queuing up in their cars for Campo Curbside meals and Farm Shop pick up orders. However, as we are hopefully entering the last phase of sheltering at home and social distancing, we think it is important to be as cautious as possible. Closing our gates for a few weeks will ensure the safety of our essential employees on the farm, as well as further encourage our community to stay home. We are tentatively planning to resume these services by May 1, in keeping with our Governor's order, and will reassess as we get closer to that date.
Introducing Campo Curbside
Through these uncertain times, we are challenging ourselves to offer new dining experiences to our community. We are thrilled to announce new family-style meals from Chef Jonathan Perno and the Campo team, available for curbside pickup Wednesday through Saturday from 4 pm until 6 pm. Simply order online the day before, and our culinary team will get to work preparing a meal that we hope will bring a little comfort to your table. We are so grateful for your support, which will continue to provide jobs to a small team of our chefs, restaurant staff and community of local farmers.
Introducing the 1922 Blend with La Fonda on the Plaza
We are delighted to present the 1922 Blend product collection, developed in collaboration with La Fonda on the Plaza in Santa Fe. The collection celebrates La Fonda’s 100-year anniversary with a custom-blended signature scent that can be enjoyed as a handmade soap, room mist and candle. Both properties were designed by architect, John Gaw Meem and share a rich history of hospitality. Los Poblanos evolved into an inn as part of a preservation project, and La Fonda has been a model of the great New Mexican hospitality experience.

Farm Journal: Herbs
Growing Herbs at Los Poblanos
Herbs. Just the word conjures up delightful associations of fragrance and flavor. With multiple uses across the culinary, beverage and wellness spectrum, a single herb or a blend of multiple essences can really make an experience sing. As we diversify and expand the ways herbs are incorporated in the kitchen, bar and spa, our farm team is increasing the quantity and variety of herbs grown around the farm. Thoughtful conversations between chefs, mixologists and estheticians allow creativity to begin in the farm fields and manifest in the many experiences available here at Los Poblanos. Each herb's potential is being explored and expanded.
Our Distillation Process
Angel's share. Angel's breath. This is what the first delicate puff of lavender essence is called as it rises in a misty, miniature cloud from the spout of the condenser, at the end port of the copper alembic distillation still. This initial puff contains essential oil, hydrosol and the heady aroma of our organic Grosso Lavender fields.
Hand-harvested in the early morning, our farmers deliver lavender to the distillation hut, where our distillers load the precious plant material into the base and column of the still. The rounded lower portion is filled with fresh well water and heated to the boiling point where the resulting steam pulls the oils and moisture from the lavender. As it is volatilized, the heat and pressure push it up into the swan neck - the graceful copper tube that connects the pointed dome of the still to the barrel of the condenser.
Farm Journal: As winter comes to a close
Winter at Los Poblanos is a quiet, peaceful time of respite for our farm and grounds team. But as the days start to lengthen, the soil warms up and preparations for the growing season begin. Tilling, pruning, fertilizing and propagation are routine this time of year as we anticipate the arrival of spring.

Whether you're celebrating the holidays with us or seeking respite from a busy season, the farm is just the place to be this November and December. With crackling fireplaces, festive decor and acres of farmland to wander, a visit will prove both merry and serene. Join us at Campo for Día de los Muertos on Tuesday, November 2 and enjoy dinner specials in addition to the regular menu after you peruse our elaborate ofrenda. Take time to slow down and reconnect with loved ones with a stay this Thanksgiving and Christmas at the Inn and enjoy exclusive Campo access and incredible special menus on the day of the holiday. This season, to express gratitude for the dedication and long hours our staff has worked through the pandemic, we will be limiting our hours at Campo and the Hacienda Spa on both Thanksgiving and Christmas Day, and will be offering reservations to our lodging guests only.

We’re washing our hands with more attention and care these days, so naturally our thoughts turn to our trusted Lavender Hand Soap a little more than usual. With a handful of simple ingredients, it’s a product we rely on every day to cleanse hardworking hands around the farm, and now we’re even more grateful for this valued product in our lavender line. It has moisturizing properties, which are much appreciated as we’re washing with more frequency, and lavender’s calming scent is especially grounding during this confusing time. Our Lavender Hand Soap was thoughtfully developed, and each ingredient plays a vital role. We are committed to creating products with the most natural ingredients possible. Our entire line is sulfate and paraben free, and is never tested on animals.
Los Poblanos Craft Gin Wins Double Gold the 2024 Bartender Spirits Awards
In this year’s Bartender Spirits Awards, Los Poblanos Western Dry Gin was awarded a Double Gold Award with an almost perfect score of 98 out of 100 points. Judged by an expert panel of 33 leading bartenders, bar managers, and buyers in the restaurant and bar industry, Los Poblanos Western Dry ranked as the best American-made gin and second in the world, just missing that mark by one point against a gin from France.

Our Favorite Farm Foods for Fall

A Los Poblanos love story
This Los Poblanos love story begins in the most unusual of places, far from our farm in the Rio Grande Valley, in the hallowed halls of the United States Capitol. As the 71st Congress was being called into session in March of 1929, two freshman members in the House of Representatives met for the first time: Albert Gallatin Simms of New Mexico and Ruth Hanna McCormick of Illinois.

These days, we're feeling pretty festive here on the farm. Over the last week, we've transformed the property from a celebration of the fall harvest season to a spectacular display of holiday cheer. The pumpkins and corn have given way to Christmas trees and wreaths. The distinctive scent of piñon wood burning in our outdoor chimeneas and the sight of migratory sandhill cranes flying gracefully overhead are two familiar signs that winter is indeed here.

Gustave Baumann’s whimsical holiday tradition
Of the many New Mexican artists who worked on Los Poblanos Ranch and La Quinta in the 1930s, Gustave Baumann was certainly one of the most esteemed. The beautifully carved wood doors and fireplace mantle at La Quinta are the work of a master at the top of his game. What is perhaps less well known about Baumann, however, is that he had a wonderful sense of humor. And nowhere was this more apparent than in Baumann's annual holiday card tradition.

A Visit to (and from) Martin Woods Winery
Our team of chefs and sommeliers have been long-time fans of Martin Woods Winery, and Evan Martin, winemaker/vigneron of Martin Woods has strong ties to New Mexico. Campo regulars will be familiar with some of these special Willamette Valley wines on our menu, and we have enjoyed building a relationship with Evan over the years. His approach to wine-making is built on the same respect for the land and sustainable practices that drive our mission at Los Poblanos.
In anticipation of our upcoming long-table dinner and wine seminar featuring Martin Woods wines, a team of our chefs and sommeliers traveled to Oregon in January to explore Evan's cellar, visit the vineyards and collaborate on ideas for a one-of-a-kind menu. Head Chef, Chris Bethoney, Director of Wine and Spirits, Dylan Storment, Head Sommelier, Graham Unverzagt and Lead Event Cook, Tom Hudgens have created an inspired menu blending Rio Grande Valley Cuisine with the distinct flavors of Oregon for a uniquely place-based dining experience.
Product Highlight: Handmade Bar Soaps
The Los Poblanos Handmade Soap Collection features unique scent combinations inspired by the land and culture of New Mexico. Each handmade, cold pressed soap has an all-natural, moisturizing base recipe, which has been developed and tested over the past ten years to provide a perfectly mild and nourishing experience. All of our bar soaps are made with all-natural high quality ingredients and essential oils. We never use palm oil or preservatives. Each bar is cured for at least three weeks to ensure it holds its shape and lasts as long as possible. Our five signature soaps highlight the many botanicals of the farm and are hand cut and cured in our production warehouse just a few miles from our lavender fields.

Summer travel looks a little different this year, and we think there's something exciting about loading up the car and exploring our own backyard. Farm Journal: Preparing for Spring
As winter begins to recede, our farmers have plenty to do across our 25-acre property as we anticipate spring's glorious arrival. Each year, the time comes to assess our beloved rows of lavender. Once they've lived about ten years, it is time to remove and replace the oldest lavender plants, as the seasonal harvest and shearing takes its toll.

History Spotlight: Ruth Hanna McCormick
A peek into Los Poblanos history
Before marrying Albert Simms and building Los Poblanos Ranch in the early 1930s, Ruth Hanna McCormick had established herself as a nationally-known leader in the women's suffrage movement. Following the first wave of the movement in the mid-19th century (led by activists Susan B. Anthony and Elizabeth Cady Stanton), Ruth and her colleagues picked up the cause in the 1910s. As a young mother and staunch believer in progressive reform, Ruth realized that women needed to vote in order to legislate change. She was particularly concerned with improving matters of public health, working conditions and childcare. As Kristie Miller writes in her biography of Ruth, "with her developing skills as a charismatic political leader, [Ruth] was in the forefront of the fight on the ballot."
