
We are thrilled to share the news that Kim Vollers has been promoted to General Manager of Hospitality Operations at Los Poblanos.
Kim joined the team in 2020, arriving right at the onset of the COVID-19 pandemic. Despite the challenges of that moment, she quickly became a guiding force, helping lead Los Poblanos through a period of thoughtful growth and increasing national recognition. Under her leadership, Los Poblanos has earned two MICHELIN Keys in the inaugural MICHELIN Guide to New Mexico, celebrated a James Beard Award nomination for Campo’s beverage program and achieved AAA Four Diamond status.
“Kim is a hospitality superstar and we’re so fortunate to have her, not just at Los Poblanos, but in New Mexico,” says Matthew Rembe, Executive Director of Los Poblanos. “Her relentless dedication, thoughtfulness and genuine care for both our guests and our team embody the values of Los Poblanos and have helped put us on the map nationally.”
Kim brings decades of hospitality experience, including her impressive tenure at the renowned Woodstock Inn & Resort in Vermont. But her relationship with New Mexico and Los Poblanos began much earlier. Years ago, she stayed at the inn as a guest and fell in love with the property, the culture, and the landscape. From that moment, she set a personal goal: one day, she would call New Mexico home.
And she did just that. Kim relocated across the country with her family including her two children, who joined the team as well, and embraced not only a new role, but a new life rooted in this place.
Kim is known just as much for her adventurous spirit as for her operational expertise. A lifelong outdoorsperson and avid runner, she has spent the past five years camping across New Mexico, exploring everything from desert canyons to high mountain forests. Her deep appreciation for place and community aligns perfectly with the mission of Los Poblanos: to create meaningful guest experiences rooted in authenticity and a connection to the land.
Her leadership has recently been recognized beyond our property as well. Kim was honored with the 2025 Vistage New Mexico Member Impact Award, celebrating her “commitment to personal and professional excellence.” She was one of only six leaders statewide to receive the recognition.
Among her colleagues, Kim is celebrated for her tireless work ethic, generosity of spirit, and unwavering support of her team. She has played an instrumental role in refining operations, elevating the guest experience, and strengthening the connections between our inn, restaurant, spa, and farm.
