Position Overview

The Assistant Dining Manager supports the Campo Dining Manager in delivering an exceptional dining experience that embodies the values of Los Poblanos: hospitality, community, and excellence. This role ensures smooth daily operations, team development, and an elevated guest experience. The Assistant Dining Manager plays a key role in assisting with managing dining and room service operations, to ensure that every guest feels connected to the rich culinary heritage and agricultural roots of the region.

Essential Job Functions

Guest Experience

  • Actively engage with guests to create memorable dining experiences aligned with Los Poblanos’ hospitality standards.
  • Support the team in understanding and anticipating guest preferences to provide personalized service.
  • Oversee the room service experience in collaboration with the Dining Manager, ensuring prompt and thoughtful service.
  • Address guest concerns with empathy, tact, and a focus on maintaining loyalty.

Operational Support

  • Assist in overseeing daily front-of-house (FOH) operations, ensuring all dining areas and room service setups meet Los Poblanos' standards of excellence.
  • Collaborate with the Campo Dining Manager and kitchen team to maintain seamless coordination between FOH and back-of-house (BOH) operations.
  • Ensure that FOH areas are consistently well-organized, clean, and reflective of Los Poblanos' aesthetic and values.

Team Support & Development

  • Act as a resource for team members, supporting their development through on-the-job coaching and training.
  • Assist in onboarding new team members, ensuring alignment with Los Poblanos' high service standards.
  • Collaborate on creating staff schedules that balance operational needs with team member well-being.

Revenue Optimization

  • Support revenue-generating initiatives by encouraging team participation in upselling and promoting seasonal or specialty items.
  • Assist in monitoring nightly Key Performance Indicators (KPIs), identifying opportunities for improvement alongside the Dining Manager.

VIP & Special Reservations

  • Help oversee VIP reservations, chef’s table experiences, and group events to ensure seamless execution and elevated guest experiences.
  • Work with the Campo Reservationist to ensure guest preferences and profiles are updated and shared with the team to enhance service.

Problem Resolution & Continuous Improvement

  • Actively seek guest feedback during and after service to identify opportunities for improvement.
  • Collaborate with the Campo Dining Manager to refine operational processes and elevate service standards.

Other Duties

  • Maintain a visible floor presence during service to engage with guests and support team members.
  • Assist in developing and implementing checklists and procedures that ensure consistency in FOH operations.
  • Collaborate with other departments to contribute to a cohesive guest experience across the property.
  • Step in to support team members during peak service times, ensuring the team operates as a cohesive unit.

Requirements

  • Experience: At least 1-2 years in a leadership role within a fine dining or hospitality setting. Strong knowledge of food, wine, and spirits is preferred.
  • Skills: Excellent communication, problem-solving, and organizational skills. Ability to lead by example and foster a collaborative team environment.
  • Attributes: Passion for delivering extraordinary guest experiences, attention to detail, and enthusiasm for the farm-to-table philosophy.
  • Schedule: Availability to work evenings, weekends, and holidays as required.
  • Physical Requirements: Ability to lift up to 50 lbs occasionally and remain standing or walking for extended periods in a fast-paced environment.
