We are excited to welcome you to Farm Shop Norte, just in time for the holiday season. One block north of the Santa Fe Plaza, Farm Shop Norte is housed in a renovated 1935 gas station and farm supply store. This one-of-a-kind environment is a destination for shopping Los Poblanos’ signature lavender products, botanical gin, and Farm Foods, alongside curated objects for the home, and New Mexico wine and spirits. Adjacent, Bar Norte is an intimate space to enjoy a cocktail made with Los Poblanos Botanical Spirits and enjoy a light tasting menu.

Booking Update for 2024 Weddings
Celebrate, Relax and Retreat
If you are interested in a wedding at Los Poblanos in 2024, mark your calendars. The booking window for all 2024 weddings will open on February 1, 2023 at 12 PM MST. Inquiries must be submitted through the online form on our website during the booking window. All 2024 wedding dates will be filled on a first-come, first-served basis. Our list of available 2024 wedding dates will be updated on a rolling basis. Once all 2024 dates are booked we will add couples to the waitlist and reach out if spaces become available. Interested couples are invited to join us for a Wedding Open House on January 14, 2023.

We are thrilled to share two new gins developed by our team of farmers, gardeners, herbalists, distillers and mixologists expressing the flavors of Los Poblanos’ historic farm and gardens, and the essence of the Rio Grande Valley. Farm Journal: Late Summer on the Farm
Late summer on the farm is a time of increasing harvest and lots of weeding. The rains we have gotten have helped with the scarce water supply, though we have been modifying our irrigation and planting practices over the last few years as we become more concerned with the flow of the river, the ditches and the spotty monsoon season.
Farm Journal: Fruit Trees Boom and Bust Throughout the Seasons
Fruit trees are integrated throughout the landscape at Los Poblanos. We grow a wide variety, each with a distinct season and individual flavor. The farm team meets regularly with the culinary team, and much of what we plant reflects direct requests from chefs, bakers and others who help us to develop a farm that supports the diversity of Los Poblanos. From the mulberry syrup in your cocktail, to a plum tart in the restaurant and the blossoms and branches that adorn our public spaces, fruit trees enliven every season on the farm. Some are hardy and reliable, while others have challenges that can lead to bounty or failure.

Capturing the taste of summer
Lavender lemonade is a longstanding summer favorite at Los Poblanos. After a hot day in the fields or an afternoon bike ride, there’s nothing more refreshing. For many years we made our lemonade in small batches from a family recipe, cold-steeping culinary lavender in fresh-squeezed lemon juice for the best flavor, serving for special occasions and sharing with lodging and dining guests.
Meet Liz Gallery, Culinary Director
Liz Gallery was born and raised in Baltimore, MD. She started her career in the front of the house, and after realizing her passion for restaurants and cooking, she took to the kitchen. Chef Gallery pursued classical training in the culinary arts through apprenticeships with admired chefs including Chef Champe Speidel, Gracie’s, in Providence Rhode Island and Chef Pauly Santee, Rococo, in Hagerstown, Maryland.

We are excited to announce our collaboration with Ranchlands, an agricultural business focused on the conservation of ranch lands in Southern Colorado that incorporates hospitality, craftsmanship, consulting and ecotourism initiatives. Our two properties share many of the same values around regenerative farming and supporting the local food economy. The team from Zapata Ranch will be visiting Los Poblanos for a conversation on Sustainable Ranching and Land Conservation on August 10th as part of our Dr. Armin Rembe Lecture Series, and a Dinner with Guest Chef Ivan Guillen on August 12th.

Together with the rest of our Culinary Leadership Team, whose members have been at Los Poblanos for between 4 and 14 years, we are grateful to have such a talented and dedicated group of individuals who continue to shape Rio Grande Valley Cuisine at Los Poblanos.
Product Highlight: Metal and Woodwork from local maker Damian Velasquez
Damian Velasquez is one of our favorite local artisan fabricators, supplying us with beautifully made wood and metal objects including the chimineas that guests enjoy across Los Poblanos. His son Alex also started a company that makes the wooden paddle boards and titanium spatulas we carry in the Farm Shop. Introducing the 1922 Blend with La Fonda on the Plaza
We are delighted to present the 1922 Blend product collection, developed in collaboration with La Fonda on the Plaza in Santa Fe. The collection celebrates La Fonda’s 100-year anniversary with a custom-blended signature scent that can be enjoyed as a handmade soap, room mist and candle. Both properties were designed by architect, John Gaw Meem and share a rich history of hospitality. Los Poblanos evolved into an inn as part of a preservation project, and La Fonda has been a model of the great New Mexican hospitality experience.

Los Poblanos: Harvard Business School Project Partner | Los Poblanos
Los Poblanos recently had the opportunity to host a team of students from Harvard Business School for one week as part of a required course called the FIELD Immersion. Los Poblanos was one of 171 FIELD Immersion Project Partners spanning 15 cities across 15 states. Together these Partners combined to host more than 1,000 Harvard Business School students in all.

Celebrating San Ysidro Day
Today marks the feast day of San Ysidro, the patron saint of farmers, gardeners and laborers. An important figure around the farm, his remarkable story has been told for centuries. Ysidro and his wife, Maria, were poor farm laborers who went to mass every morning before going to work. Yet despite the hours of lost labor, the fields and plants were as well cared for as those of other laborers. When other farm workers became envious and told the landowner, it was discovered that while Ysidro and Maria were praying at mass, an angel was plowing their fields for them.

The story of Penny and her best selling Lavender Salve
Women's History Month is an exciting time for Los Poblanos as our property has been deeply impacted and shaped by amazing women. One of the most influential women throughout the property's history is our current owner and Los Poblanos matriarch, Penny Rembe. Penny and her late husband Armin have lived on the property since the 1970s, and Penny's creativity and business savvy have influenced the preservation and growth of Los Poblanos in countless ways. From opening the original bed and breakfast in 1999 to developing the recipe for our signature Lavender Salve, Los Poblanos simply would not be the place it is today without Penny's leadership and inspired vision.
The Legacy of Women in the Fields and Gardens of Los Poblano
Los Poblanos has a long and varied history of visionary women that created the foundation and the future of our cherished farm, fields and gardens. Beginning in the 1930s, Ruth Simms was instrumental in laying the groundwork to build an experimental farm that pushed the boundaries of farming and gardening in the New Mexico desert. By bringing Rose Greely to Los Poblanos to design the formal rose garden and surrounding areas, Simms firmly established that women were vital to the vision of the farm's future. One of the first female landscape architects in the country, Rose Greely made a permanent statement with her design contribution to our historical gardens.

Farm Journal: The Lavender Propagation Process
Winter is the season for propagating lavender in our historic 1934 Lord & Burnham greenhouse. A naturally occurring hybrid, our Grosso lavender is a cross between English and Portuguese varieties. These plants are also known as lavandins, prized for their essential oil yields. Grosso is sterile, meaning it does not produce viable seeds, so the only way to propagate Grosso is by taking cuttings.

Welcome Spring on the Farm
There's nothing quite like the way spring awakens our little corner of the North Valley. As the days lengthen ever so slightly and temperatures slowly begin to warm, our dedicated farmers germinate vegetables, herbs and flowers in the greenhouse, grown from seeds saved from previous seasons. Lavender cuttings from our fields were taken to the greenhouse during the winter months, have since sprouted roots, and are now transplanted into larger pots to encourage more growth. Daffodils and crocus will soon peek their heads above ground, and our flowering trees will burst into color seemingly overnight. Migrating Canada geese have already made the farm their winter home, and will likely welcome a gaggle of goslings who sweetly parade across the property and learn how to swim in our lotus pond.

Our mission is to preserve the historic Los Poblanos Ranch by cultivating a dynamic business dedicated to sustainable agriculture, hospitality, historic preservation and community. As such, we perpetuate the agricultural history by maintaining an active organic farm. And what would a working farm be without animals? The presence of animals on our farm adds a lovely element of surprise and delight to anyone who comes across them, and they are a nod to the long agricultural history of the property. From the original Indigenous farmers who likely had animals to help support their needs long ago, to the Simms family's model experimental farm of the 1930s and 1940s, there's no doubt animals have been an integral part of Los Poblanos agricultural history.

Merry and Bright
These days, we're feeling pretty festive here on the farm. Over the last week, we've transformed the property from a celebration of the fall harvest season to a spectacular display of holiday cheer. The pumpkins and corn have given way to Christmas trees and wreaths. The distinctive scent of piñon wood burning in our outdoor chimeneas and the sight of migratory sandhill cranes flying gracefully overhead are two familiar signs that winter is indeed here.

Just ask our many repeat visitors: there's something indescribable, but utterly enchanting, about Los Poblanos this time of year. With restorative spa treatments, organic field-to-fork menus, plenty of activities and 25 acres to explore, it's easy to spend several days on the farm without ever turning on your car.
Product Highlight: Handmade Bar Soaps
The Los Poblanos Handmade Soap Collection features unique scent combinations inspired by the land and culture of New Mexico. Each handmade, cold pressed soap has an all-natural, moisturizing base recipe, which has been developed and tested over the past ten years to provide a perfectly mild and nourishing experience. All of our bar soaps are made with all-natural high quality ingredients and essential oils. We never use palm oil or preservatives. Each bar is cured for at least three weeks to ensure it holds its shape and lasts as long as possible. Our five signature soaps highlight the many botanicals of the farm and are hand cut and cured in our production warehouse just a few miles from our lavender fields.

Campo, meaning field in Spanish, reflects our dedication to organic farming, both in our own fields and within our local food shed. As our talented culinary team imagines new menus and sources ingredients, the underlying mission is to stay close to home. On the farm, this means our culinary and farm teams work together each season and create plans to grow heirloom, organic produce.
Thoughtful Water Use on the Farm
Water is the most precious resource we have, and without thoughtful consideration, the importance of this treasured life source can be overlooked. With our extensive farming initiatives here at Los Poblanos, it could be very easy to use more water than necessary. However, stewardship is one of our foundational core values and we actively work to use water in careful, strategic ways.
The Pueblo Peoples of the southwest had created acequia systems to irrigate their dryland farming long before the Spaniards arrived with the systems that for them originated in the Middle East. Drawing water from the Rio Grande, acequias are still at work in New Mexico today. Just like natural rivers and streams, they create agroecosystems that promote soil conservation and the creation of healthy soil, while also forming wildlife habitats. These gravity-flow ditches are maintained by the community under an elected official called the mayordomo.

Introducing the Dr. Armin Rembe Lecture Series
We are thrilled to introduce the Dr. Armin Rembe Lecture Series at La Quinta, occurring monthly beginning on October 20. Named in honor of Dr. Rembe, who passed away this spring, and inspired by his love of Los Poblanos, his curiosity, intelligence and community relations, this series aims to celebrate his legacy by promoting stimulating conversations rooted in the core values and mission of Los Poblanos. The lecture series is also a nod to the rich history of La Quinta Cultural Center of the 1930s and 1940s, when the Simms family held lectures and events that promoted the arts.
